A Decadent Raw Strawberry Cake for Healthy, Shiny Hair

When I prepared this dessert for my choir colleagues to celebrate the birthday of our beloved conductor, it was enjoyed very much by all. I received many compliments on it. Whether you enjoy this delicious raw strawberry cake with friends, family or a special occasion to celebrate, you will benefit from the many hair strengthening ingredients inside. You will receive many compliments on the attractive cake and you will be pleased with the many healthful ways this cake will enhance your hair.

You will find that the ingredients in this cake are very beneficial for having strong and healthy hair. With omega-3 fatty acids, you will see a noticeable difference in the health of your hair with stronger locks. Brimming with Vitamin C, strawberries are known to encourage hair growth. The rich oils and minerals in coconut will impart beauty and shine to your hair and promote healthy growth as well. Honey acts as a humectant by pulling water out of the air and will reward you with a healthier scalp and glowing hair.

For the strawberry cream, the base layer of the cake, you will need 500 grams (or 17.6 ounces) of raw cashews which have been soaked overnight, 500 grams (also 17.5 ounces) of frozen or fresh strawberries. Whether you obtain frozen or fresh berries will depend on the season. Also, you will need 2 teaspoons of pure vanilla extract, 12 tablespoons of coconut oil that you’ve melted in a bain-marie, 8 tablespoons of raw honey and 8 tablespoons of juice left over from the strawberries (the juice can be gathered after they’ve been in the fridge for a few hours). Divide the ingredients for the cream into four parts so they will blend better and then combine everything all together in a large bowl. Pour all the ingredients into a cake pan (I used a cake pan that is 23 cm in diameter). Place the pan into the freezer for one hour.

While the cream is setting, you will now make the strawberry jelly. Combine 200 grams (or 7 ounces) of strawberries, 2 tablespoons of raw honey and 3 to 4 tablespoons of psyllium husk. Since the psyllium husk will swell quickly, blend this mixture quickly and pour over the cake as soon as it is blended. This will form the jelly texture.


To decorate with the finishing touches, add some fresh coconut flakes, a few strawberries and a few other types of berries. This will present a beautiful cake to your guests. Enjoy this delicious dessert along with the many benefits for your hair and health you will enjoy in return.
