If your hair is dry and brittle and there is hair fall, adding nutritious foods like oranges and bananas are a few ways to enhance the strength, shine and beauty of your locks. Add in shine boosting coconut oil as well as raw honey to improve the health of your scalp and you will enjoy a delicious way to boost the benefits to your hair.
To begin making this cake, start with the ingredients for the base layer. You will need 150 grams (or 5.3 ounces) of both hazelnuts and pitted dates. Be sure to soak your dates and hazelnuts overnight in water so they will blend beautifully. When you are ready, chop the dates into smaller pieces so they will process better in the blender. Adding in the hazelnuts first, pulse them until they are minced a bit, then add the dates and mix together thoroughly. Spread the mixture as the base layer in a 16 cm (6.3 in) cake pan. Press the mixture evenly with your fingers, then place the cake into the freezer.
For the banana and orange creams, you will need a total of 200 grams (or 7 ounces) of raw cashews. They will also need to be soaked overnight.
Next, you will make the banana cream. Starting with 100 grams (or 3.5 ounces) of the cashews, add in 3 tablespoons of coconut oil. Blend together until it reaches a rich, creamy consistency. Pour this cream over the base layer and return the cake pan to the freezer.
Now it’s time for the orange cream. Taking the other 100 grams (or 3.5 ounces) of the cashews, add in the juice from 2 ripe, sweet oranges. Add 1 to 2 tablespoons of raw honey (or to your taste), the grated peel from ½ of an orange and 3 tablespoons of extra virgin coconut oil. Process everything together until creamy. Remove the pan from the freezer and pour this next layer into the pan. Place the cake back into the freezer.
After it has hardened a little, sprinkle coconut flakes overtop and take orange slices, pushing them slightly into the orange cream. Place the cake into the freezer for a few hours or overnight if needed. When it has hardened, you can then take the cake out of the pan and place it on a decorative plate for serving, keeping it in the fridge until ready to serve.
This bright and flavorful cake will be a delicious addition to any meal and is sure to impress your guests.
