If you are a chocolate lover and enjoy eating foods beneficial to shiny and healthy hair, you will be sure to love this raw chocolate and vanilla cake. I made this for my birthday and not only was its appearance one of my favorites, I received praise from my guests who loved the way it looked and tasted.
Made with walnuts, cashews, dates, coconut milk, honey, carob powder and more, these vitamin and mineral packed nutrient dense foods will boost the shininess, health and growth of your hair. By eating these beneficial foods, you are nourishing your hair from the inside out, feeding your hair with delicious and healthy foods that will reward you with beautiful hair.
For the bottom layer, you will need 100 grams (or 3.5 ounces) of walnuts, 100 grams (again, 3.5 ounces) of dates, 3 tablespoons of carob powder and a little water. Be sure to soak the walnuts and dates overnight. When blending the ingredients, make sure to process only until the mixture is crispy and sticky. You are not blending to make a cream for this portion of the recipe. In order to keep the mixture blended well, you will need to stop the blender and rearrange the ingredients so you can mix until the walnuts and dates are crumbled. Add the mixture to the bottom of your cake pan and press firmly to the bottom, creating the base for the cake.
Next, you will make the vanilla cream. You will use 125 grams (or 4.4 ounces) of raw cashews that have been soaked overnight, 75 ml (or 2.5 ounces) of coconut milk, 2 tablespoons of honey or to your taste, 3 tablespoons of coconut oil that has been melted in a bain-marie and ½ teaspoon of pure vanilla extract. Blend these ingredients together until a rich and creamy mixture has formed. Pour the ingredients overtop of the base layer and place the entire cake pan into the freezer while the chocolate cream is made.
The chocolate cream is made with 125 grams (or 4.4 ounces) of raw cashews that have been soaked overnight, 150 ml (or 5 ounces) of coconut milk, 2 tablespoons of honey or to your taste, 3 tablespoons of coconut oil and 4 tablespoons of carob powder. Blend all of the ingredients together until you again have a smooth and creamy mixture. Take the pan from the freezer and add this layer to the cake, returning the cake pan to the freezer while you make the chocolate icing.
To make the chocolate icing, take 100 grams (or 3.5 ounces) of cocoa butter that has been melted in a bain-marie, 3 tablespoons of carob powder and two tablespoons of honey or to your taste and mix thoroughly in a bowl. Then, remove the cake from the freezer and pour the chocolate icing over top of the cake and put back in the freezer for just a few moments. Check after one minute as this process happens very quickly. You want to be able to take a handful of cranberries and use them to decorate the top by pressing the cranberries just a little into the icing so they won’t fall. Then, you can place the cake pan back into the freezer overnight. A few hours before serving, place the cake into the refrigerator, when it will be ready to savor.
