- 250 grams (about 9 ounces) of champignon mushrooms medium size
- 2 bunches of green onions
- 3-4 cloves of garlic
- 2 tomatoes
- ½ a cup (120 milliliters) of lemon juice
- Himalayan salt
- 1 teaspoon (5 grams) of paprika
- ¼ teaspoon (1 ¼ grams) of turmeric
- 1 teaspoon of raw mustard
- 50 milliliters (1/4 of a cup) of extra virgin olive oil
- ½ bunch of dill
To make raw marinated mushrooms, start by cutting the mushrooms into 4 pieces and place in a bowl. Finely chop the green onions and then slice the tomatoes. Add all of the ingredients into a blender except for the mushrooms and dill. Process the ingredients until they become a relatively homogenous sauce. I like to be able to still feel the pieces of the various ingredients, so I do not chop the ingredients completely.
Next, pour the sauce into a bowl. Chop the dill and add it into the sauce. Mix the dill well into the sauce and then pour the sauce over the mushrooms. Mix the sauce and the mushrooms well. Put the mushrooms in the refrigerator and let them marinate overnight. I am not a fan of the raw taste of mushrooms, but when the mushrooms are left to marinate for many hours, the delicious taste of the sauce is infused in the mushrooms which brings out the delicious flavor.
