There is so much I love about coconut. Not only is it delicious and can be used in so many recipes, it is also very good for you. Your hair will love the dandruff-fighting benefits of coconut as well as the rich, healthy shine you’ll achieve with its beneficial oils.The dates in this recipe are another wonderful way to nourish your hair. Dates have many unique and beneficial properties for the improvement of your hair. Loaded with vitamin B and iron, these succulent fruits provide protection against hair loss. Your roots will be nourished from the inside out and your hair will grow strong. You will also enjoy longer and even thicker hair.
Like many raw nuts, almonds pack a great deal of hair boosting benefits too. Almonds are high in magnesium and vitamin E. Magnesium has long been known as an essential mineral for growing healthy hair. Experts have long noted that an increase of magnesium in the diet will stave off hair loss.
The ingredients for this recipe are as follows. You will need 250 grams (or 8.8 ounces) of raw cashews, 125 grams (or 4.4 ounces) of pitted dates, 6 tablespoons of virgin coconut oil that has been melted in a bain-marie, 1-1/2 cups (of 250 ml/8.4oz) of coconut flakes, 75 ml (or 2.6 ounces) of coconut milk, 75 ml (or 2.6 ounces) of water derived from soaking the dates, ½ teaspoon of pure vanilla extract and 1 handful of raw almonds.
For this recipe, it is easier to divide the ingredients into two, three or even four sections and process each batch separately. Having a blender that doesn’t process large quantities can be helped along by dividing this recipe. I recommend this vertical blender for solving this exact issue. It requires less liquid for processing the candy mixture and will result in less work and dividing of ingredients.
In separate containers, soak the cashews, almonds and dates overnight. Reserve 100 ml (or 3.5 ounces) of the water you soaked the dates in. In order to help the dates process a bit easier, chop them a bit for the blending process. Place the dates, cashews, coconut oil, vanilla extract, the coconut milk and water from the dates and process. Next, add the coconut flakes and process again. The final result should be a tight “leaven”.
Now, you are ready to form the candies. You should be able to make about 45 candies. You form the candy by rolling it with both hands. When it has formed a ball, insert an almond into each center. When this process is finished, roll the candies thoroughly in coconut flakes. Keep them in the refrigerator for several hours and then you can enjoy them at your leisure!
