This quick and easy to prepare salad is delicious. I was first tempted to create this dish after someone remarked that it would taste like classic eggplant salad. I simply adored the classic recipe and enjoyed the baked version, but this does not compare. Since I eat only raw food I gave up baking eggplant, I chose the benefits of the nutrients in the raw version over the great taste of the baked version that is lacking in nutrients! This will be a recipe I enjoy often, it doesn’t compare to my mom’s baked eggplant salad but it’s tasty and nutritious and that is enough for me and my hair.
You will notice how your hair will shine and glow with the nutritious, hair boosting benefits this salad contains. Eggplant will strengthen your hair follicles and promote the growth of strong hair. Olive oil will keep your scalp and hair shiny and healthy too. Avocados are a rich source of protein and oils that moisturize and soothe the scalp.
To make this recipe, you will first need to prepare the avocado mayonnaise. Scoop out the contents of one ripe avocado, the juice from ½ a medium sized lemon, Himalayan or your favorite sea salt to your taste, 1-2 teaspoons of raw mustard and 4 tablespoons of extra virgin olive oil. Blend the ingredients until smooth and creamy. Next, peel your eggplant and cut half of it into bite-sized cubes.
Next, it’s time to put everything together for your salad. Using a medium sized bowl, combine the chopped eggplant and the avocado mayonnaise along with some chopped onion. Mix until well combined.
If you don’t gobble it all up on your sandwich, this will keep nicely in the fridge in a bowl with a tight lid or wrap.
